New Take on Old Favorites

Tired of the same old soup and sandwich, eggs and toast or just don’t know what to do with all the random food you may have in your fridge or pantry? Over the years I have created some amazing and not so amazing “new” recipes from leftovers or odds and ends food in my house. Sometimes using the same foods in a different way makes all the difference in mixing things up.

I wanted to share my newest concoctions in hopes to inspire some from our readers!

First up is Tomato soup with shredded chicken and rice.

This one is fairly simple and you can use any soup you wish.

  • Progresso Tomato Basil soup on hand so that is what I used. Any soup will do.
  • A few days prior I cooked several chicken breast in a crock pot (until it shredded)
  • Ready brown rice and quinoa (microwavable or use any rice)

Simply cook the soup on the stove top and warm up the chicken and rice in the microwave. Once soup is cooked, combine 1 cup with the chicken and rice and viola! Chicken and rice soup. I find this meal very filling and is packed with protein and carbs. 

English Muffin French Toast and Eggs.


I love English Muffins but was getting tired of toasting them with cream cheese. I decided to mix it up and make French toast with the English muffins, turned out pretty yummy!

  • English muffin cut in half- I used Thomas Double protein oatmeal cinnamon English muffin
  • 3 egg whites
  • Cinnamon
  • Coconut oil

Use coconut oil in place of butter to coat the skillet, or use butter spray. Put egg whites in a bowl and add cinnamon too egg whites. Dip the two halves of the English muffins, coating both sides, in the egg and cinnamon mix. Place the English muffins in the skillet and cook for several minutes on each side. Cook the remainder of the eggs in the skillet to serve on the side. You can top the French toast with sugar free syrup, strawberry jelly or any other topping of your choice.

Flatbread Buffalo Chicken Pizza

Who doesn’t love pizza?? It’s one of my favorite foods and I am always looking for new ways to make it more nutritional sound. Greek yogurt pizza crust is one of my all-time favorite ways to make homemade pizza!  Sometimes I don’t have time or the right Greek Yogurt to make the crust so convenience wins out. I found Kangaroo brand Flat bread and decided to give that a try for pizza.

  • Kangaroo flat bread
  • Shredded chicken
  • Buffalo wing sauce of choice
  • Mozzarella cheese

Put desired amount of buffalo wing sauce on the flatbread with the shredded chicken and mozzarella cheese. Cook in the over and 350 for 5-7 minutes. Use any toppings desired to make any type of pizza. Another one of my favorites is bbq chicken pizza. Play around with different healthy toppings to discover your favorite.

Keeping food interesting and new is key for me in staying on track with my diet. Don’t shy away from trying to combine different foods together, you never know what you will come up with!
