Stuffed Peppers

On my last trip to the Farmers Market I couldn’t help but buy a bunch of peppers. I love all peppers and when they are fresh and on sale I cant stop from purchasing a few or a lot! Now what to do with all these peppers? I can only eat so much sautéed peppers and onions. I decided to use my leftover peppers and make stuffed peppers. I had 2 sweet Italian peppers and 1 yellow bell pepper.


  •  1 pound 90% lean ground beef
  •  1  8 oz can of tomato sauce
  •  Hillshire Farm smoked Turkey sausage (as much as desired)
  •  Jasmine Rice (1/2 cup cooked)
  •  Mozzarella Cheese (1/2 cup)
  •  Garlic seasoning
  •  Pepper

First, brown the beef in a skillet. While the beef is cooking go ahead and get the Jasmine Rice going. Then wash and hollow out the peppers to get them ready for the meat filling.

Enjoy a glass of wine while cooking!

After beef and rice are cooked, add the tomato sauce to the beef while stirring in the rice; mix in and let simmer for a few minutes. While beef mixture is simmering, I mixed the chopped turkey sausage with the mozzarella cheese in a separate bowl and added some garlic and Italian seasoning.

After beef/rice mixture has simmered, mix turkey and cheese with beef/rice mixture and proceed to fill peppers with the stuffing. Once peppers are filled cook in oven for 15 minutes at 350 and enjoy!
