The Skinny Test Kitchen: Banana Oatmeal Loaf

I love banana bread, but it can be tricky to fit into my healthy eating plans. This banana oatmeal loaf is a great substitute and a great breakfast option. Not to mention, it’s super easy to make.

Ingredients:

1 cup quick cooking oats
2 ripe bananas
2 tbsp coconut oil
1/3 c. almond milk
2 packets stevia
1 tsp salt
1 tsp cinnamon
1/4 tsp butter extract (optional)

  • Preheat oven to 375. Grease small bread loaf pan.
  • Mix together dry ingredients. Set aside.
  • Mash bananas and mix together rest of wet ingredients.
  • Combine wet and dry ingredients and pour into pan.
  • Bake for 30 minutes.

Serving size – 1/2 loaf

370 calories
51 g carbohydrates
18 g fat
7 g protein

You can easily substitute out the banana for another fruit of your choice – i.e.: pumpkin, applesauce, etc.
