The Skinny Test Kitchen: Protein Peanut Butter Balls

These little snacks are delicious and pack a protein punch! While there are a lot of homemade protein bar/ball recipes out there, I wanted to create one without the added sugar of honey or syrup. So I went to work and found success surprisingly quickly. While I made a couple attempts to increase the protein to fat ratio, I kept coming back to the recipe below, which has a great balance of macronutrients and is still delicious.

Protein Peanut Butter Balls


*Makes 12 balls

1 cup Mom’s Best Choice Crispy Cocoa Rice

10 pitted dried dates, chopped

1/2 c. creamy peanut butter

2 scoops Cellucor Peanut Butter Marshmallow Protein Powder

33 white chocolate chip morsels

  • Mix together crispy rice, chopped dates, protein powder and chocolate chips. Add peanut butter.
  • Roll into small, bite-sized balls.
  • Refrigerate in a sealed container.

Serving size – 3 balls or 1/4 of batch

Protein: 20 grams

Fat: 19 grams

Carbohydrate: 35 grams
