Bowl Full of Yum – Quick Dinner Ideas

Looking for a quick and easy meal to serve the family for dinner?  Look no further than today’s recipes.  Here are three quick, easy and sure to please dishes.

Cooking healthy doesn’t have to be complicated and can taste great. I’m always making meals in a pinch – but I want healthy ingredients and refuse to sacrifice flavor.  I enjoy my food and make healthy dishes that I’m proud to serve to others.

One of my favorite types of meals to make are all-in-one bowls, with a rice base.  Inspired by the sushi bowls I was served in Hawaii, I began creating my own combinations.

Here are a few of my favorites:

Buffalo Turkey Bowls (pictured)

1 cup rice
4 oz. ground turkey (cooked) or diced chicken
1/2 avocado, chopped
2 tbsp buffalo sauce
2 tbsp light sour cream

Ahi Tuna Bowls

1 cup rice
4 oz tuna steak, raw or seared, cubed
1/2 avocado, chopped
1-2 tbsp wasabi cream sauce (wasabi paste mixed with low fat sour cream or plain greek yogurt)
soy sauce to taste

Mexican Bowls

1 cup rice (white or Mexican rice)
4 oz seasoned ground turkey, beef (steak strips or ground beef) or chicken (ground or cubed), or black beans
1/4 cup cheddar
1/2 avocado, chopped
onions, olives, jalapeños, etc. to taste
2 tbsp taco sauce (I like Ortega)
2 tbsp low fat sour cream

All of these meals are a great balance of protein, carbs and healthy fats, can be made in bulk for family meals and save well, to serve as leftovers.  And the best part – they can all be made in under 15 minutes.
